Gennaro’s Classic Spaghetti Carbonara:

Gennaro's classic carbonara recipe is as indulgent as it is delicious. He recommends using the best quality ingredients for a creamy, smoky taste.

PREP TIME: 15 MINUTES. COOK TIME: 10 MINUTES

Serves: 2

Ingredients:

  • 200g spaghetti
  • Salt
  • 1 tablespoon extra virgin olive oil
  • 150g pancetta, finely chopped
  • 1 garlic clove, crushed
  • 3 Clarence Court Egg yolks
  • 40g grated parmesan & extra to serve
  • Black pepper

Method:

1. Place a large pan of slightly salted water on the heat, bring to the boil, then cook the spaghetti until “al dente.”

2. Meanwhile, heat the olive oil in a frying pan over a medium heat, add the garlic clove and allow to infuse the oil for a minute.

3. Stir in the pancetta and cook for about 3 minutes until it starts to get crispy.

4. Place the egg yolks in a bowl with the grated parmesan and mix well together.

5. Discard the garlic from the pan, then, reserving some of the cooking water, drain and add the spaghetti.

6. Toss well over the heat so it soaks up all the flavour, then remove the pan from the heat. Add a splash of the cooking water and toss well, season with black pepper, then pour in the egg mixture – the hot pan will help to cook the egg gently rather than scrambling it.

7. Toss well, adding more cooking water until it’s lovely and glossy. Serve immediately with an extra grating of parmesan and black pepper.
