With Halloween out of the way, you might be wondering what to do with your leftover pumpkin. Well, pumpkin is a superfood, full of vitamins, antioxidants and minerals, so do reap the bene‘fits.

The vegetable itself is rich in beta-carotene, which the body converts into vitamin A. The high amount of betacarotene means that eating pumpkin is a great way to maintain eye and heart health.

Low in calories but high in protein and ‘fibre, pumpkin is perfect if you are watching your weight (or your cholesterol levels) but still want to enjoy a tasty meal.

Don’t just throw away those pumpkin seeds. High in protein and magnesium (as well as other minerals), they are thought to help prevent bladder stones and reduce cholesterol. They are also a feel-good food, helping to boost your mood, so try adding a handful to your cereal or when making bread.
